Why is my cat doing an odd chewing motion?

My kitty (12-years old) has been to see several vets, (emergency, my regular vet, and the animal hospital at the University) due to weight loss, loss of appetite, projectile vomiting, and lethargy. They took several xrays and did quite a bit of blood work, put him on an IV drip for nausea, etc., but never fully diagnosed the problem.

What does it mean when a cat chews on something?

My cat does the chewing thing where it looks like he is chewing gum. The vet has checked and there is nothing wrong w/ his teeth and nothing wrong w/ his mouth. He is only three. His white blood cell was really really high but the test were not definitive.
